At Forever Vos Farms, we believe in transparency and quality, ensuring you know exactly where your food comes from. Below are answers to some of the most common questions about our farm, products, and ordering process.

What’s the difference between live weight and hang weight, and how does Forever Vos Farms charge?

  • Live weight refers to the full weight of the animal before processing, while hang weight (or carcass weight) is the weight after the animal is dressed but before final butchering. The hang weight typically ranges from 60-65% of the live weight.

  • Forever Vos Farms charges based on hang weight because it provides a more accurate price for what you’re actually getting. Since some of the live weight includes unusable parts (such as organs, hide, and bones), hang weight better reflects the final product in your freezer.

How much freezer space do I need for a quarter, half, or whole beef?

  • As a general rule of thumb, you’ll need:

    • Quarter Beef → 4-5 cubic feet (about the size of a small chest freezer)

    • Half Beef → 8-10 cubic feet

    • Whole Beef → 16-20 cubic feet

  • A good reference: 1 cubic foot of freezer space holds approximately 30-35 lbs of beef.

Can I customize my cuts when ordering a quarter, half, or whole beef?

  • Yes! When you place an order for bulk beef, you’ll have the opportunity to fill out a cut sheet, allowing you to choose how your beef is processed. This includes selecting steak thickness, roast sizes, ground beef packaging, and specialty cuts like brisket or short ribs.

  • If you’re unsure about your selections, we’re happy to guide you through the process to help you get the best mix for your needs!

How long does your beef dry-age, and why does it matter?

  • Our beef is dry-aged for a minimum of 14 days, enhancing its tenderness and depth of flavor. This process allows natural enzymes to break down muscle fibers, resulting in a more flavorful and tender cut of meat compared to grocery store beef, which is often wet-aged for a shorter period.

Do I have to pay for my order upfront, and how does pricing work?

  • For weight-based products, your card is authorized at checkout for the maximum estimated price, but you’ll only be charged for the final weight upon pickup.

  • For bulk beef orders, we require a deposit to secure your processing date, and the remaining balance is due based on the actual hang weight at pickup.

Where do the other products in your store come from?

  • Everything sold in our store is sourced within 32 miles of our farm from trusted local farmers and producers. We carefully select partners who share our commitment to quality, ethical farming, and sustainable practices, ensuring you get the freshest, best-tasting products possible.
